Duck & Waffle's new cocktail list includes drinks made with banana skins, pollen and burnt toast

Not only do you get a bloody big gherkin at Duck & Waffle’s fortieth-floor bar but you can now sip on drinks with a side of banana skin. Head of cocktail development Rich Woods has devised a two-part menu that bigs up sustainability. On the ‘urban foraging’ list, find ingredients sourced within the Square Mile in drinks like the dizzying Pollen. Or opt for ‘urban decay’ cocktails that incorporate food waste – what doesn’t sound delicious about the Breakfast with Hemingway, a marmalade-flavoured rum tipple that’s served with a side of burnt toast?
