City envy: we want a soft drink bar like Sydney

With the news that millennials are drinking way less than their forebears, it's perhaps inevitable that something like this would happen. Sydney has just started a bar revolution (possibly) by opening an establishment that's replaced craft beer with craft soda. PS40 has its own custom-made bottling machine that allows it to whip up impossibly hip-sounding fizzy drinks like smoked lemonade, blackstrap ginger and wattleseed cola. There are always four core sodas on tap, plus a seasonal special. Should you be feeling naughty, the bar will whip you up a cocktail out of them too, but then you won't be able to waft home in a cloud of alcohol-free, living-my-best-life smugness. Unfortunately, for now, we Londoners will have to put up with the fact that the most exciting thing in soft drinks is the unlimited refills at Nando's.

We also want a brunch convention like LA and heavy metal yoga classes like Pittsburgh.
