London, get your emojis at the ready: we’re getting an actual aubergine pop-up. But you might want to start coughing now. This purple party is open for just one afternoon, so you may have to pull a sickie to get there.

Opening in Spitalfields Market on Friday May 19 at 12pm (to celebrate National Vegetarian Week) for three hours and three hours only, the ‘AU-EM-GEE’ pop-up (OMG, geddit?) is a collaboration between veggie burger vendors The Vurger Co. and the folks at Tabasco. The Auberger will be the star dish on the menu: an aubergine, onion and chickpea burger topped with smoked cheese and chipotle sauce (that’s the Tabasco bit). AU-EM-GEE will also be serving slaw, hummus pots and pea guacamole, but weirdly there’s nothing else aubergine-focused on offer. Hopefully that meaty, fruity auberger will be big enough to satisfy… πŸ†

AU-EM-GEE will be open from 12pm-3pm on Friday May 19 at Bishops Square, Spitalfields.

Love a fruit-focused pop-up? There’s an avocado bar coming to Shoreditch.
