Dishes with no gluten, sustainably fished seafood, many biological products, a locavore selection of produce and environmentally conscious building materials and furniture: this is the philosophy behind the Inspira Santa Marta Hotel restaurant. Instead of following the latest trends in cookery, it has kept this doctrine since its establishment, more than five years ago. The cuisine, as the name suggests, is Mediterranean-inspired, with tasty dishes including shrimp and lime risotto or pork knuckle with tomato and “migas” crumbs.
