Cascais was the chosen location for Tiago Penão to fulfill a long-held dream: to open a Japanese restaurant where he could shine as a team while teaching a bit of his art. The chosen name reflects the style of Japanese cuisine that, in a literal translation, means "cut and cook," but it goes much beyond that. It focuses on the proximity between the chef and those seated in front of him – in front because it all happens around a counter where just over ten people sit. While it's possible to choose from the menu, the ideal is to indulge in the Danketsu tasting menu (€90), which means "reunion" in Portuguese. One of the most memorable moments of the meal is the sushi: eight nigiris in the edomae style, an ancient technique where all the fish undergoes curing, in salt or seaweed, with rice that has no added sugar and is prepared with three vinegars, one white and two made from sake lees.
