Mr. Afonso is not anymore in charge of the "bifana" (pork steaks) sauce, prepared in a big pan by the window facing Rua da Madalena. However, José Rodrigues insures the recipe - with no secret ingredient but "love, care, white wine and a bit of lard" - remains the same. "This is a restaurant for Lisboners, our prices are not for tourists", says José, who took over the burden of serving the best "bifanas" in town a year and a half ago. There are also pork rinds and pork skin that you are supposed to eat at the counter, with a beer from the tap to wash it down, and then move along.
