[title]This year sees the chefs at Serena Brasserie at InterContinental Kuala Lumpur creating delicious dishes derived from treasured family recipes. Themed ‘Warisan Tradisi di Serena’, this Ramadhan spread offers traditional dishes alongside an array of made-to-order stations featuring tandoori, roti john, shawarma, rojak, kibas bakar (lamb slow roasted over charcoal) and the excellent dessert station with ais krim potong, cendol and ais kacang.
Start with generous servings of Malay appetisers and fresh seafood like oysters, scallops, slipper lobster and mussels. Then move on to the highlight of the buffet – dishes created with the chefs’ family recipes. Chef Mortaza’s Ikan Merah Tiga Rasa Pak Cik Mortaza is crispy fried fish with a tangy sweet, sour and spicy sauce; Sup Kawah Gear Box Pak Cik Fakrul by Chef Fakrul is based on his mother’s timeless recipe; and the charcoal-roasted marinated lamb was a staple in Chef Yusof’s village when he was growing up. And that’s just the beginning! Don’t miss out on the Indian and Oriental specialities like lamb biryani, aloo ghobi, wok-fried crab with kam heong sauce and more.
For dessert, Uncle Chan’s Ice Cream Potong will bring to mind memories of going to the pasar malam and indulging in your favourite cold treat; and Chef Sze Wei’s homemade Tau Foo Fah is the perfect end to a hearty meal. Aside from these, diners will be spoilt for choice with a variety of popular Malay pastries such as kuih talam, onde-onde, kuih lapis and traditional cookies. There’s also a chocolate fountain and a good assortment of cakes.
