From April 24 to 27, Chef Dan Moon from The Gainsborough Bath Spa, will be holding culinary court at The Library in The Ritz-Carlton, Kuala Lumpur. Having won awards including the first Von Essen Chef of the Year and three AA Rosettes (a prestigious award given by the British Automobile Association), he’s here as part of the Guest Chef Dinner Series.

The six-course degustation menu showcases his obvious talent in taking amazing ingredients and creating classic dishes with a definitive twist. You’ll begin with a chicken liver parfait with almond granola, chicory and orange sorbet and end with a delectable dark chocolate ganache paired with banana ice cream and peanut butter mousse – great bookends to the meal. Standout dishes include the smoked salmon ballotine with a horseradish mousseline and yuzu caviar, and the roasted duck breast (perfectly cooked) with a duck leg confit spring roll and plum.
