Operating under the umbrella of Singapore’s sandwich specialists Sarnies’, the non-halal The Big Cheese is a small stall on the lower ground floor of da:mén. It specialises in grilled cheese sandwiches, offering more than five varieties, including bacon, chilli con carne and Marmite. The sandwiches are pretty basic: no fancy bread, sauces or ingredients. But it’s good enough as is and it’s affordable, going from RM10 for a plain grilled cheese sandwich. Make a meal out of it with a side (fries, nachos, mac and cheese, Buffalo wings, gherkins and more) and a float for an additional RM6.

Softcore really knows its stuff when it comes to food with gooey centres. Besides the crowd-favourite molten cakes, their grilled cheese sandwiches are exceptionally melty as well. What you want to go for is the classic grilled cheese sandwich; the ingredients are simple – melted cheddar, mozzarella, pickles and paprika in between two slices of butter-toasted sourdough bread – but all together they make a decent sandwich. The pickles add crunch, the crisp and buttery bread cuts the creaminess of the cheese, and the sides of thick-cut fries and salad make it a full meal.

The French equivalent of a grilled cheese, Yeast’s Le Croque Monsieur is two thick slices of French bread with turkey ham and layers of Gruyère and parmesan in between. There’s also more cheese and ham on top of the sandwich adding to the cheesy goodness. You’d think the bread would be a soggy mess when there’s so much cheese, but the bread holds up, giving a little crunch to complement the overflowing cheese.

With three different types of cheese in the sandwich (cheddar, mozzarella and parmesan), the croque monsieur at Frisky Goat was made for cheese lovers. Tucked between two French toasts (they also make their own bread) are slices of smoked turkey ham and melted cheddar and mozzarella. The sandwich is topped with melted parmesan and béchamel sauce which flows down the sandwich like lava. If that’s still not enough, upgrade to a croque madame – basically the croque monsieur but topped with a sunny-side up.

The grilled cheese sandwiches at Commoners Space are made with the house-baked sourdough bread. You can go with a plain grilled cheese sandwich or get an upgrade in the form of the RTB (rocket, tomato and beef bacon; sometimes, they replace the rocket with local greens).
