Japan's famous Ippudo is special for its a rich, milky reduction of pork bones without the overpowering smell and taste of pork. If you prefer your ramen flavours subtle, the signature Shiromaru Motoaji is a delicate beige broth of melting belly chashu, green onions, kikurage (a type of fungi) and a flavoured egg. Mix in sesame seeds and fresh garlic (which you can request for) for a more heady flavour in the broth. The strength at Ippudo lies in its noodles; the waiting staffs ask you if you like it well-cooked or al dente and always go for the latter for a springy, addictive result.
