This is where their legendary white club crab (steamed crab on top of really smooth egg whites) is found. It takes considerable skill to perfect this dish; consistency is crucial for both the preparation of the crab and the egg. They also serve a huge selection of dishes served in every way conceivable – 24 styles of prawns, seven styles of mantis shrimps, 14 styles of sotong (squid), nine styles of bamboo clams and an immeasurable amount of fish cooking styles.
