Co-founder of Agak-Agak, Basira Yeusuff shows us how to make the perfect picnic sandwich to take to these best parks in KL – a ‘big ass’ roast beef sandwich that serves six people.

Choosing the right bread is essential. Basira likes wholemeal bread for a picnic sandwich; it’s crusty on the outside and soft enough on the inside to absorb the juices from the meat.

What you choose as your base will decide the outcome of your sandwich. For this roast beef sandwich, Basira sears 350g of beef before chucking it into an oven for 15 minutes at 160C.

According to Basira, arugula is perfect because it’s tasty and it’s the type of greens that won’t become soggy when mixed with sauces. She also uses a smoked Dutch cheese for the sandwich.

‘There’s nothing worse than a dry sandwich,’ Basira says. She recommends applying butter liberally so that it acts as a buffer between other spreads and the bread to prevent it from getting soggy. In this sandwich, she uses the meat juices from the seared beef and mixes it with unagi sauce and sesame seeds. She also uses onion jam and Dijon mustard to give the sandwich a bit more excitement.
