Considered one of the most popular Jewish foods around the world, the lack of decent bagels in the Jewish state is somewhat appalling. The art of bagel-making was developed by European Jews, who brought them to the United States, today’s bastion of the bagel. But in 2004, Sam decided it was time to bring the American bagel experience to Israel. He sought out the Greenstein family, New York bagel bakers with a five-generation-old recipe, and learned every step from them. Also serving pastries, cookies, salad platters, cheeses, smoked fish, and everything else characteristic of the ideal American deli, the founders found quick success building four locations across Jerusalem and now one in Tel Aviv.
