Summer is here, the sun is beating harsh, and every gust of wind offers mere seconds of momentary relief. For the hot and humid days of the Israeli summer, there is nothing like a frozen popsicle for a blessed cool off. If you're also fed up with the cheap AMPM lemon and grapefruit popsicles, here's a way to keep it fresh and interesting with a recipe that includes berries and rum for the perfect summer get together.
The ingredients (for 10 pops);
500 g raspberries
200 g of sugar
200 ml of water
Lime juice
40 ml rum
Instructions:
2. Place the sugar and water in a pot. Place on medium heat, stir until the sugar dissolves completely.
3. Bring the mixture to a boil and allow it to simmer for a few minutes on low heat.
4. Remove from heat and then keep the syrup for later.
5. Then, mash the raspberries and strain with a strainer to pick out the seeds.
6. Mix the raspberries with lime juice, rum and the cold syrup.
7. Mix all the ingredients thoroughly, fill in the molds of the popsicles, and place them in the freezer for at least 12 hours.
8. To eat them, wash the sides of the molds under hot water, so you can remove the them.
