As a native Californian who now resides in Tel Aviv, Olvera brings her international experience and particular philosophy to every dish she creates. An original soul and true pioneer, Rima consciously ignores culinary fads and industry standards, carefully making each dish her own. Rather than re-creating the classics, Rima likes to allow her diners to experiment with a symphony of flavors from around the world.
Chef Olvera uses the best and freshest produce, fish, and seafood, both locally sourced and imported, only in their proper season.
