The first Tai Ping Koon opened in 1860 in Guangzhou, but the founder moved his franchise to Hong Kong when war struck. We should consider ourselves lucky. There are now four restaurants, all championing its original blend of Western cuisine with a Hong Kong twist. It is rumoured that they invented the now popular Swiss wings, featuring a glaze made out of soy sauce, rock sugar, Shao wine, spices and chicken soup. Tai Ping Koon uses fresh chicken wings and immediately marinates them upon order. That alone makes this a must-try.
