Like many other omakase restaurants in Hong Kong, Sushi Hare is notoriously difficult to book a seat at, but for very good reason. The restaurant, helmed by master sushi chef Motoharu Inazuka, is located in Sheung Wan and offers an omakase menu based on the traditional Edomae-style of sushi with a touch of creativity that accentuates the natural flavours of the ingredients. The shari's (sushi rice) balance of vinegar, salt, and sugar also match exceptionally well with the seasonal fish and seafood, in which you can taste the stronger flavours of vinegar when paired with the fatty and oily fish such as tuna belly, yellowtail, and mackerel. Difficult to book, but definitely worth the wait. Lunch omakase ranges from $900-980 while dinner goes for $1,900-1,980.
