Michelin-starred restaurant Roganic collaborates with local craft beer brewery Yardley Brothers for a one-night-only beer pairing tasting menu ($1,480) on June 25. The special dinner menu will feature head chef Ashley Salmon’s seasonal farm-to-table dishes paired with six servings of Yardley Brothers’ signature and limited-edition craft beer releases. The menu starts with bites of citrus-cured salmon, chickpea wafer with broad beans, truffle pudding, and mackerel tartare paired with Yardley Brothers’ Mum’s Rhubarb Crumble Pastry Sour, followed by Roganic’s signature marjoram brined cabbage, soy and miso-glazed shimeji with wasabi paired with the spicy sweet and sour beer Thai Chilli Getaway. Main highlights include poached bream with asparagus and lovage paired with Yardley Brothers' second barrel-aged release under the Bugs series, Gamay Noir à Jus Blanc Barrel-Aged Sour, and Wah Kee pork dish matched with Frederiskdal French Oak Barrel-Aged Cherry Sour.
