Perrier-Jouët, makers of fine Champagnes since 1811, is once again treating Hongkongers to an immersive dining experience. The Art of Revealing Nature ($2,420 per person) dining event was inspired by its free-spirited founders Pierre-Nicolas Perrier and Adele Jouët, featuring a pairing menu that showcases Maison Perrier-Jouët's symbiotic relationship with nature. Guests can indulge in a six-course multi-sensory culinary adventure complete with music by Hong Kong harpist Elam Lai and a visual presentation by photographer Justin Hui. Chef Jaakko Sorsa crafted the dishes to represent the sky, earth, ocean, forest, land, and islands (influenced by the locales that chef Sorsa have worked in).
Expect each course to be accompanied by a special melody and a photograph reveal. Our favourites from the menu include the 'ocean' served with langoustine, diver scallops, sea urchin, king salmon, and wild trout roe – a pure expression of the taste of the sea paired with Perrier-Jouët Blanc de Blancs; 'earth' served with root artichokes, salsify, black truffle, garnished with edible black ants and paired with Perrier-Jouët Belle Époque 2012; and 'forest' made with wood pigeon slow-cooked with thyme and then pan-fried until golden brown, served with sautéed chanterelles and lingonberries paired with Perrier-Jouët Blason Rosé.
