Inspired by English poet Percy Shelley, Percy’s aims to be a neighbourhood restaurant and bar with a strong focus on responsibly sourced seafood. The menu will make use of plenty of local and seasonal ingredients with a raw bar offering dishes such as a zesty lobster cocktail with white soy aioli ($258), small plates including a scallop egg waffle with maitake and bonito ($188), and larger plates of coral trout with fennel skordalia and lemon parsley butter ($888), among other things. They also aim to be a new hangout spot in Soho that offers cocktails as well as whisky, sake, wine, bottled and draught beer.
