Chef Ferran will demonstrate how to cook sweet peas and razor clams. If you'd like to follow the recipe, prepare the following ingredients:
Ingredients (serves two people):
2/3 cup sweet peas
5/8 cup shallots
1 cup diced carrots
1 clove chopped garlic
1.5 tbsp Sherry vinegar
6 razor clams (may be replaced with clams, prawn, squid, pork, or chicken)
1/2 cup fish stock
2 tablespoons butter
chopped chives for garnish
1/2 cup olive oil
salt
black pepper
