National pride and Old World Hong Kong are what The Chairman restaurant is all about. In 2022, the multi-awarded restaurant relocated from its former address in Kau U Fong West to a new venue on The Wellington in Central with a revamped look. Its former 1940s Hong Kong-inspired design, complete with a whitewashed interior – featuring half-curtains, dynasty chandeliers, and white table linens – is now replaced with a warmer modern interior with blue-green wall highlights, grey table cloths, lots of plants, and mood lighting. Well-edited, the refreshed menu is brief by the standards of Cantonese restaurants. Along with new creations, the restaurant's renowned signature dishes are still being served, including the camphor-wood-smoked goose and steamed fresh flowery crab with aged Shaoxing wine served with flat rice noodles.
