World-renowned chef Ricardo Chaneton has had a fair bit of success in his career, not least in working previously at the three Michelin-starred Mirazur in southern France. The chef's latest Hong Kong venture is Mono, which delivers a reinterpretation of Latin American cuisine presented with French technique. in sleek, modern surroundings. Containing only 30 seats, this intimate eatery's signature dishes are all experimental fusions of fresh ingredients and spices, all of which can be washed down with an impressive selection of wines from Frances Burgundy and Bordeaux regions. The tasting menu changes on a regular basis, but a mainstay highlight is their signature mole made with over 20 ingredients. This season, standout dishes include new items from their dinner menu like the Brittany turbot served with grasshoppers mousse and black garlic, and the Tuscany lamb in Caribbean curry with green asparagus.
