Lan Kwai Fong Entertainment Group has just opened their latest venture on the 24th floor of California Tower with a new Italian restaurant, Aria, helmed by chef Andrea Zamboni, formerly from 8 ½ Otto e Mezzo Bombana.
Chef Zamboni brings with him 20 years of Michelin-rated restaurant experience to Aria's kitchen and provides a contemporary twist to traditional Italian dishes and family-style recipes for the restaurant's menu. Zamboni's style draws strongly from Michelin-starred chefs he has worked with over the years: Umberto Bombana of 8 ½ Otto e Mezzo Bombana in Hong Kong; Oliver Glowig of Capri Palace Hotel in Napoli; Luca Marchini of Ristorante L'Erba del Are in Modena; and his greatest inspiration, the legendary 'father of modern Italian cuisine', Gualtiero Marchesi of Ristorante Teatro alla Scala il Marchesino in Milan, whose motto, "leading by example is the highest form of teaching", is written in Italian on the tiles of Aria's show kitchen.

In Aria, guests can enjoy cigars and cocktails as well as an expansive wine list featuring 150 bottles from Italy and around the world that can be paired with fresh meat, seafood, and vegetable dishes from chef Zamboni's kitchen that includes blue lobster and Bagna-cauda fondue ($268), Italian milk-fed veal cutlet Milanese style with tomatoes, celery relish and Sicilian lemon ($428), and roasted cherry tomatoes, Apulian burrata and basil (HK$108).
