First established in 2009, the Michelin Guide Hong Kong Macau is now on its 13th edition and will continue with the 2021 selection as a digital ceremony scheduled on January 27, 2021. Michelin Guide's International Director Gwendal Poullennec will announce the year's new honorees virtually via Michelin Guide Hong Kong Macau’s official Facebook page, as well as the regional Michelin Guide Asia YouTube channel. “Despite the ups and downs we have all been through in 2020, the Hong Kong and Macau restaurateurs community have demonstrated an incredible resilience and commitment to overcoming the obstacles and adapting their businesses with an unchanged passion, talent and innovation," Gwendal Poullennec states. "Through the global crisis, economic challenges and temporary shutdowns, many restaurants continued to play their part in keeping Hong Kong and Macau’s culinary scenes lively and dynamic by offering creative dining experiences to foodies. That’s also what we want to celebrate during the coming ceremony.”
Quality of the ingredients, mastery of cooking, the harmony of the flavours, expression of the chef’s personality in the cuisine, and consistency, both over time and across the entire menu, remains as the five criteria in choosing the honoured establishments. The 2021 selection will also debut a new distinction for the region, the Michelin Green Star, which will highlight restaurants that embrace a responsibility towards the environment with sustainability as part of their daily operations such as food waste reduction, recycling, the promotion of local and ethical ingredient sourcing.
Meanwhile, Michelin Guide Hong Kong Macau 2021's new Bib Gourmand selection – awarded venues that offer three courses for a maximum price of HK$400 in Hong Kong or MOP$400 in Macau – will be announced on January 18, 2021, a week prior to the Star Revelation digital ceremony.
