The Pierside Bar at Royal Pacific Hotel & Towers in Tsim Sha Tsui, which has a lovely view of Victoria Harbour, is serving up a tasty blend dubbed the Silly Rabbit. The cocktail features elderflower ice cream and syrup with vodka and a splash of Campari for a cool and zingy sip. If you’re after something more indulgent, try the Chocolate Blitzen, which mixes chocolate ice cream with vodka, cacao and Irish cream liqueur. Both hit the spot and are available until September.
