Though inspired by Mexican sci-fi movies, wrestling and the 20th-century avant-garde movement known as Stridentism, Tamalli Space Charros keeps the food at its truck, Tamalespaceship, surprisingly down-to-earth. Donning lucha libre masks, the crew delivers flavorful masa concoctions like the “Complicate tamal de Carne” (flank steak with Oaxacan green mole) and “Picturesque tamal de Puerco” (Yucatan-style roasted pork with tomato habanero sauce).
