This restaurant has it all: sushi, steaks, ceviche, mussels, unicorns—you name it. But for our money, Stetsons is best treated as a good old-fashioned steak house: That means starting with a complimentary popover with Romesco sauce, moving on to a surprisingly sophisticated wedge salad (in which roasted tomatoes smartly replace fresh ones) and feasting on a tender, beautifully prepared steak. And if you want a sushi roll on the side, guess what? You can have that, too.
