After the death of chef Homaro Cantu, chef Chris Anderson took over the molecular gastronomy restaurant, where past trickery included a play on egg-drop soup in which frozen pellets of egg and microgreens were dropped tableside into steaming soup, and triple-seared beef was paired with “caramelaserized wine.”
