This is one of our favorites for feeding our need for every type of corn creation under the sun. The banana leaf–steamed tamale is delicious, incredibly smooth masa hiding tender shredded chicken kicked up with green chilies, and the empanadas are among the flakiest in town. The sopes can be topped with everything from pastor (roasted pork) to huitlacoche (’shroomlike corn fungus). Skip dessert and finish with a “bull”—a blend of rum, lime juice and beer with a tart tamarind flavor.
