In the summer, expect dishes like wood-grilled trout served with berries, pea shoots and shallots poached in Riesling;or a confit of Swan Creek spring lamb with nettle pudding and morels. Weekends bring a crowd more concerned with a liquid diet, but don't let that stop you.
