A specialty of Mexico’s Guerrero region, the cecina (strips of beef that have been pounded thin, marinated, then grilled) is served with guacamole, pico de gallo and delicious housemade tortillas—a simple but full-flavored dish. More elaborate presentations include the cecina rellena, where the meat is rolled with chorizo and cheese and topped with a cactus sauce that leads to delicious, messy results.
