The Loop lunchers who crowd U.B. Dogs' small storefront know the cheese on their cheddar dog ($3.75) is Merkts from Little Chute, Wisconsin. Scoop up the excess cheese with some fresh-cut fries, then dig in. The sharp cheddar overwhelms the steamed Vienna dog—even when there’s two on the bun—but keep in mind this hot dog is little more than a vehicle for delicious cheese.—Jake Malooley
