Don Pedro is a a staple for great carnitas in Pilsen. The meat is cooked in rendered pork fat until it's juicy, crisp and melts in your mouth. On weekends, the line is long and there's limited seating, so your best bet is to order to go. Trust us, it's worth the wait. Plus, if you're lucky, you might even see Rick Bayless, because even he can't resist the carnitas here.
