Ex-Blackbird chefs Will Schlaeger and Shawn Clendening bonded over their mutual love of Japanese culture and cuisine, and they've created Cat-Su Sando to combine traditional recipes with some Western influence and ingredients. Formerly operated out of a Humboldt Park cloud kitchen, the duo have taken over the former home of Dante's Pizzeria at California Avenue and Augusta Boulevard. You can order the namesake Cat-Su—fried chicken thigh, fermented jalapeño, pickles and cabbage on milk bread—or sample a bowl of ramen and kushiyaki (grilled skewered meat). And if you need to wake up, the house made Milk Tea Royale made with almond milk and a blend of assam and li shan tea should do the trick.
