If you haven’t visited Time Out Market Chicago in a while, now’s the perfect time—a host of exciting additions are on the way. Starting August 21, two new vendors, Sua and Gutenburg, are bringing the flavors of Basque Country plus mouthwatering burgers to Fulton Market. Curious about what to expect from the full menus? Here’s everything each restaurant will offer.
Sua
Sua, which translates to “fire” in Basque, is the latest concept from Michelin-trained chef Aitor Garate Berasaluze. Paying homage to the comfort and warmth synonymous with Basque Country, it celebrates Spanish cooking through a variety of refined wood-fired and coal-roasted dishes. Nearly every item on the menu is kissed by flames, from the grilled romaine salad with anchovies to grilled scallops with stewed beans.
Berasaluze, who grew up in Basque Country and has also worked in some of the region’s top kitchens, is placing an emphasis on fresh and premium ingredients. That means he plans to switch things up every now and then in order to highlight what’s in season—like the grilled tomato gazpacho. Most plates are meant to be shared, including the mushroom croquetas and steak tartare that’s charred on the grill, a technique Berasaluze says he learned in Finland. One offering you may want to enjoy all to yourself, though, is the Angus steak sandwich. It’s packed with pieces of tenderloin, arugula and house sauce and served on grilled bread.
Of course, you can’t leave without something sweet so Sua is baking Basque-style cheesecakes for dessert. With a burnt, caramelized exterior and a creamy and custard-like center, this irresistible treat is available by the slice or whole cake if you’re feeling generous.
Gutenburg
Burger lovers, rejoice! Gutenburg is joining the Market to deliver an inspired lineup of gourmet sandwiches. Chef Jorge Kauam draws influences from the hamburger’s modest origins in Hamburg, Germany and blends them with modern techniques to create a tantalizing menu. The namesake, umami-rich Gutenburg Burger stars two smashed patties, which are seasoned with a specially crafted spice rub, alongside cheddar, lettuce, tomatoes, onions, pickles and a housemade sauce. But that’s just the start—other options include the Guten Belly, a burger adorned with caramelized pork belly and bourbon-fig BBQ sauce; the Goat Cheese and Wild Mushroom burger; the Egg and Truffle burger; and a burger boasting double pork patties, crispy potato sticks and Zeisner Curry Ketchup. There are also keto-friendly and plant-based choices.
If you’re hankering for something that isn’t beefy, Kauam makes housemade sausages for his German-Style Hot Dog that’s dressed with special sauce, crispy onions, bacon, cheese sauce and herb oil. Or you can try the Chicken Schnitzel Sandwich topped with provolone, lemon butter sauce, arugula, tomatoes and crispy onions.
The flavor profiles are uniquely different across the board, and that extends to the potatoes as well. You can, and should, complement your burger or sandwich with a selection of fries. There’s the ever-popular Truffle Parmesan Fries alongside Cheddar and Bacon Fries and Sweet Potato Fries with brown butter and blue cheese. Save room for dessert—Kauam’s experience as a chocolatier and pastry chef helped him develop his German cake and Black Forest cake recipes, and they’re served in jars with indulgent extras so you can easily take ‘em to go.
