Madai brings fresh sushi to Time Out Market Chicago

Savor maki, nigiri and sashimi with Latin flair in Fulton Market.

Sushi lovers, you can now enjoy a fresh taste of the sea at Time Out Market Chicago.

Madai has joined the all-star lineup of kitchens inside the Fulton Market food and cultural hub. The new sushi concept is led by chef Ismael Lucero Lopez, a seasoned veteran in Chicago’s restaurant scene. Lopez’s previous stints have included Japanais, Rebar, TenGoku Aburiya and Arami, as well as time at New York’s Kissaki.

With Madai, Lopez is employing his wealth of experience to craft a menu that blends both Japanese and Latin influences. Guests can try a variety of specialty and traditional maki rolls, chirashi bowls, sashimi, nigiri and more. Signature offerings like El Baja (panko ebi, tuna, avocado, marinated jalapenos) and Tres Ronin (tuna, hamachi, salmon, avocado, cilantro, cucumber, poblano, chile de arbol oil, lime zest) show off Lopez’s creativity, while a selection of vegetarian rolls ensures that there’s something for everyone.

“I always get the question, ‘Why not Mexican food?’ Because I’m Mexican,” Lopez said. “I feel like Japanese food adopted me … I try to execute every dish that I make the right way, respect the culture and also give it a little twist.”

Madai isn’t the only opening Lopez has in the works. The chef plans to open Casa Madai in Pilsen soon, focusing on omakase dinners. He hopes to eventually offer that type of dining experience at the Market in the future. For now, though, Lopez is just happy to bring his flavors and consistency, plus quality fish to a new audience.

“I’m very excited about coming to Time Out Market," Lopez said. "This is one of the things I’ve always wanted to do.”

Madai is open 11am-10pm Monday through Saturday, and 11am-9pm on Sunday. Check out photos of what to expect below.
