Fall is here and with it, some more exciting new additions to Time Out Market Chicago.
The food and cultural hub in Fulton Market welcomes County BBQ and Everything Countz HomeStyle Biztro to its already amazing lineup of the city’s best chefs and restaurants. County BBQ
Established in 2013, Little Italy’s County BBQ is one of Chicago’s best smokehouses. Owner Bonni Cameron, who had previously worked at the restaurant as a general manager, took the reins in April of 2020, amidst the pandemic. The menu offers smoked meats from regions all across the country—Texas-style brisket, Carolina-style pulled pork and, of course, rib tips from Chicago. The mouthwatering selection has earned County BBQ numerous accolades, including a Bib Gourmand designation from the Michelin Guide.
“You know, there’s a reason I bought [County BBQ]. Because I love the food and I love the guests that come in here,” Cameron said.
The brisket, in particular, is a standout. County BBQ smokes it low and slow, avoiding the pitfalls that cause dry and overcooked meat.
“It’s super tender and has nice fat content. It has a peppery, garlicky flavor from the rub we use,” Cameron said.
Guests will also be able to chow on smoked wings and smoked salmon, which is available on a sandwich, alongside a salad or on its own. The barbecue is complemented by three different sauces—a sweet and tangy house sauce, a spicy house sauce and a Carolina mustard sauce. If you’re more of a sides person, the mac and cheese is made with a beer cheese sauce that adds a bit of tanginess to the dish, while creamy corn pudding always hits the spot. Don’t forget the brisket chili, either. It’s a hearty stew packed with smoked brisket and topped with cheddar, jalapenos and sour cream.
Everything Countz HomeStyle Biztro
Merging their passions, husband-wife owners Juliea and Christopher Clippard launched Everything Countz Wellness Cafe back in 2006. Juliea was a personal trainer at the time while Christopher was a chef, so the business was a sensible evolution of their relationship. Operating both a restaurant and a catering arm, the couple aimed to reinvent how diners ate.
“Our passion is really changing the trajectory of how you eat and process food,” Juliea said. “It’s about cooking healthy and bringing health and awareness into your everyday kitchen … Everything Countz stands for everything you do to better your health.”
At Time Out Market Chicago, Everything Countz's offerings will include a variety of sandwiches, including a smoked turkey meatloaf sandwich and a grilled mac and cheese sandwich featuring gouda, cheddar and mozzarella. There will also be turkey chili and a jerk chicken Caesar salad, sides like coleslaw and honey butter mashed potatoes, plus teas and lemonade. These items may sound simple, but that’s by design.
“After you get to a certain amount of ingredients, you actually take the health out of it and it becomes pasteurization. So we try to remain below five ingredients, and that helps us to still cook regular, homestyle food, but it has a healthier impact on your system,” Juliea said, adding “anything that’s on our menu is something that you should be able to make at home in a healthy format.”
With health-conscious dining on the rise, the Clippards are excited to join the Market and introduce more people to their brand of cooking.
“We hope that each time guests walk away with a plate of food, they’re like ‘oh my god, this is really good. I can eat this over and over again and I don’t feel heavy or bloated.’”
