In February 2015, the Fairmont became one of three hotels, including the Hyatt Regency and the Doubletree North Shore, in the Chicagoland area to offer an on-site Kosher kitchen for events at the hotel. The kitchen, which remains locked unless a Rabbi is present to make sure everything is correctly prepared, offers a catering menu with dishes like tuna, avocado and watermelon ceviche, caramelized onion and potato puff knishes, carved to order slices of herb-crusted rack of lamb and more.
