The annual pig cook-off is one of the most decadent events of the year. This year, the five competing chefs, Tim Graham of Travelle, Abraham Conlon of Fat Rice, Giuseppe Tentori of GT Fish & Oyster, Cory Morris of Mercat a la Planxa and Ryan McCaskey of Acadia Restaurant, are tasked with making six dishes from a whole heritage breed pig. The winner goes on to compete at the Grand Cochon event at the Food & Wine Classic in Aspen for the title King or Queen of Porc (Nightwood's Jason Vincent took the title in 2012). Tickets to the event score you porky dishes from each chef, plus cheeses from Pastoral and ice cream from Jeni's Splendid Ice Creams, along with selections from a bourbon bar and a mezcal bar.
