Health-focused, fast-casual restaurant to open with menu from Paul Kahan

Paul Kahan (Blackbird, Avec and the Publican) is developing a menu for Left Coast Food & Juice, a health-focused restaurant set to open by late March in the old Muskie’s restaurant at 2728 N Lincoln Ave, Crain’s reports.

The restaurant is not associated with One Off Hospitality but hopes to open multiple locations. The first will include a 55-seat dining room, bar and carryout, along with a patio. Crain’s reports that prices will be in the $10–$15 range, using free-range, organic and sustainably raised products.

Crain’s says the restaurant will have a strict “no-butter” mantra, with menu items like cold-pressed juices, smoothies, bowls, wraps and salads, developed by Kahan and his former One Off Hospitality deputy Justin Large.

There’s no doubt it’ll be tasty with Kahan behind the menu, and maybe this will even become the healthy restaurant franchise we can eat at regularly. I mean, how many times can we really justify spending $20 on those Whole Foods salads?
