Three Dots and a Dash is one of Chicago's most popular tropical concepts, but did you know there’s a second bar located within called the Bamboo Room, where guests can sip cocktails mixed with rare and high-end rums. The 22-seat area offers a menu curated by beverage director Kevin Beary; expect simple, well-balanced beverages that are more refined than their Three Dots counterparts. A highlight is the daiquiri, which features a blend of at least three rums and is served over hand-shaved ice. Though the drinks are constantly changing, favorites like the Clairvoyant Missionary—a milk punch topped with mint chartreuse pineapple foam—and a Grog are usually on offer. Rum novices shouldn’t be intimidated, as the knowledgeable bartenders are more than happy to guide you toward something suited for your palate, and there are also flights that range from introductory rums to limited releases. And when you get hungry, snack on Island-inspired fare, such as coconut shrimp and kalua pulled pork sliders.
