If you have an idea, it's always a good idea to stick to it. By which we mean: If you want to have a country Western–themed bar (such as this spot, which replaced People Lounge), don't put up Bulls and Bears pendants and broadcast NCAA games with the sound on. And if you want to be a taco-and-fajita joint, don't serve burgers. And if you simply can't compete with other neighborhood taco bars, why not try just being yourself?
