Vusi Ndlovu adds spice to Heritage Day

Take a bite out of South Africa’s collective culinary memory at Time Out Market Cape Town this Heritage Day, as dynamic chef Vusi Ndlovu – the chef behind live-fire kitchen Mlilo – takes guests on a masterclass blending tradition and innovation.

Hosted in the Time Out Studio, upstairs in the bustling Market, this once-off event will feature an interactive spice and seasoning masterclass, where guests will learn essential tips and tricks for enhancing their dishes in their home kitchen.

The event takes its inspiration from Ndlovu’s restaurant in Time Out Market Cape Town –  Mlilo – which offers a journey through the diverse culinary heritage of Africa. The menu celebrates the myriad ways in which fire has been incorporated into cooking across the African continent, from traditional Zulu shisanyama to the Kenyan classic nyama choma.

And yet, Ndlovu may never have found his calling in the kitchen.

Born in Zimbabwe and raised in Pretoria, Ndlovu’s family wanted him to be an engineer, but he chose to pursue his passion for cooking. After a humble start on a hotel buffet, he found inspiration from top chefs, including renowned chef David Higgs. Vusi’s career took a bold turn when he worked in Belgium at the acclaimed restaurant In de Wulf, sharpening his skills in modern cuisine. Returning to South Africa, he brought this innovation home, blending his African roots with global techniques.

At Mlilo, Vusi’s mission is clear: to share African culinary traditions with a modern twist.

His Heritage Day masterclass will dive into the art of brining, curing, and spicing, with each technique demonstrated during the masterclass and three-course meal. And, with Heritage Day also celebrated as National Braai Day in South Africa, you can expect to leave with a drawer full of new-found skills to elevate your barbecue game at home!

Vusi Nldovu’s Heritage Day Masterclass is hosted in the Time Out Studio on September 24 from 12 pm – 3 pm.

Tickets are priced at R395 per person (Mlilo masterclass, and a three-course meal) or R495 per person (welcome glass of Cap Classique, Mlilo masterclass, three-course meal, with wine pairings per course) and are available via Howler.
