Salsify chef to open new restaurant in Cape Town

Look forward to an ocean-inspired menu drawing on African cooking techniques in this brand-new Waterfront eatery!

Ryan Cole, the award-winning chef behind Salsify at the Roundhouse, has announced that he will be opening his second restaurant in Cape Town in August 2024.

Set within the ever-popular V&A Waterfront precinct – just steps from the Time Out Market Cape Town –  COY will see Cole bring his singular approach to understated fine dining to the popular shopping and dining precinct.

'At COY we will present an ocean-inspired exploration of African produce, age-old preparation techniques, forgotten ingredients and ways of cooking,' explains Cole. 'The ocean is on our doorstep and the mountain provides an exceptional backdrop, so it's only natural that we draw inspiration from them both.'

Cole, who won the Eat Out Woolworths Financial Services Chef of the Year Award for 2023, is certainly no stranger to the ocean. He grew up in a family of fishermen, and regularly spends his days off casting a line into the deep waters of the Atlantic Ocean, turning the catch of the day into inspired courses at Salsify.

Expect more of the same at COY, where Cole will be working alongside head chefs Geoffrey Abrahams and Teenola Govender to create a menu built on a strong foundation of sustainable, ethical, seasonal, and local sourcing of ingredients. While the final menu is still under wraps, look forward to plenty of seafood, an abundance of on-trend ferments, heritage ingredients and rediscovered traditional African cooking techniques.

The new space, hidden away in the heart of the Waterfront, has been created by Cape Town-based studio KT Interiors, who have created an understated yet contemporary space that speaks to both COY's African identity and the ocean focus of the menu. No surprise that the space has also been designed to maximize the surrounding views of mountain and sea.

COY will be open for lunch and dinner from Wednesday to Monday. Bookings open from August 9, via Dineplan.
