Our Spanish roots in gastronomy are evident in the national obsession with the potato omelette. Soft, well-cooked, with spicy sausage, onions, or cheese... There’s something for every taste and palate.

And as we prepare for Tapeando 2025, the fourth edition of the much-awaited gastronomic festival with tapas routes in restaurants across Buenos Aires, Mendoza, Córdoba, Rosario, and Mar del Plata, we’re sharpening our knives with recommendations of where to try some of the best in the city. Pick your favorite!

1. La Caña Vermutería

In this small tapas bar, the potato omelette follows the authentic Spanish tradition with a creamy, smooth texture inside. The recipe? The potatoes are slowly confited until tender, the onions are caramelized to add a sweet touch; everything is mixed before going into the pan and cooked just long enough to stay juicy, without runny egg, but with that irresistible soft spot. It’s served in its classic version or with delicious toppings like raw ham and aioli or anchovies, which add a fresh, balanced touch.

Tip: It’s the perfect omelette to enjoy with crunchy bread and a good vermouth.

Where: Marcos Sastre 3301, Villa del Parque

2. Perro Verde Cantina

This cantina, which fuses Spanish and Argentine gastronomy, boasts that its potato omelette is one of its star dishes. You can choose from the classic with onion, potatoes, and eggs; an option with chorizo rojo (spicy sausage); or a stuffed one with pistachio mortadella and cheese, which is a delicacy. Of course, we suggest pairing it with a pitcher of vermouth or a caña (small beer).

Tip: Every day from 6 PM to 8 PM, with every drink you order, you get a free tapa.

Where: Honduras 5656, Palermo.

3. Condarco

The potato omelette is an icon at Condarco, which, thanks to word-of-mouth, has become one of the most famous in the city. Chef Pablo Fridman worked tirelessly to perfect it and can proudly say he succeeded: a thin, pale crust of cooked egg with a soft, creamy filling made with just two ingredients—confit potatoes that melt in your mouth and organic eggs that don’t spill on the plate. A delight!

Where: Av. Dorrego 901, Chacarita.

4. ¡Sí, tortilla!

As its name suggests, in the heart of Belgrano, we find this unique spot that has become the ideal destination for lovers of authentic Spanish tortilla. Born over two years ago from the hands of a Madrileño determined to bring the true flavor of this Iberian classic to Buenos Aires, they specialize in take-out. The offer? Freshly made tortillas with a traditional base of potatoes, eggs, and onions, with the option to add delicious ingredients like chorizo rojo, spinach, ham and cheese, pancetta, cheddar, or parmesan.

Tip: Thanks to its efficient format and constant availability of flavors, it’s the perfect option to enjoy a tasty meal, whether at home, at the office, or on the go.

Where: Vidal 2515, Belgrano.

5. Paxapoga

This traditional Spanish tavern located in the heart of Palermo has specialized in paellas since 1977 but also offers a potato omelette that you must try. You can choose to have it whole or as a pincho (skewer) and pair it with other dishes. For the more traditional, they have the classic potato omelette, but the standout is the house specialty with Asturian chorizo rojo, which is distinguished by its smoky flavor.

Tip: The menu includes all kinds of Spanish dishes like rice, fish, and seafood.

Where: Beruti 4643.
