With just two years in the market, Cauce de los Fuegos has established itself as one of the most prominent restaurants in Buenos Aires. Located in the touristy Puerto Madero neighborhood, this restaurant, led by Chef Edgar Pronio, has caught the attention of the Michelin Guide in 2024, which included it among its recommended spots in Buenos Aires.
Recently, Cauce unveiled its new spring-summer menu, making the most of seasonal ingredients. Here’s a spoiler: we’re sharing our favorites with you.
To start, it’s worth trying the charcuterie at Cauce—it’s a real treat. Always accompanied by a good glass of wine, which flows abundantly here. Sommelier Celestino Rodríguez is present daily to advise diners on the best wine pairings for their dishes. They even organize monthly wine tastings in collaboration with top-tier wineries.
If the weather is nice, we recommend sitting outdoors to enjoy the food with the best views of Puerto Madero.
After the appetizer, it’s time for the starters. And here the decision is unanimous: go for the pacú empanada. Vegetarians will love the grilled asparagus, hummus, poached egg, and spiced peanuts.
For the main course, the choice is tough, dear reader. Meat lovers must opt for a grilled dish, no question. Our favorite is the Argentine Asado with five ribs.

If there’s room for more, don’t miss the beetroot and blue cheese risotto or the homemade pasta, with asparagus tortelli leading the way.
There are also various burgers and fish options to indulge in. And for a side? The grilled artichokes are out of this world, as well as the roasted sweet potato or the mashed potatoes.
It’s dessert time, and there’s no option to ask for the bill without trying the meringue with cream ice cream and red fruit coulis. If you’re one of those who believe ice cream aids digestion, you’ll want to try some of their homemade flavors.
