If you're visiting the province of Mendoza and looking to spend your day in a natural setting, the Potrerillos dam, with its dreamlike views, is a must-visit. I assure you, one way or another, you'll leave amazed.

But what if I raise the stakes and tell you that, in addition to enjoying a postcard-worthy landscape, you have the opportunity to experience a unique gastronomic proposal nestled among the mountains? What is the Chirivía Experience?

It all starts even before reaching the destination. The journey itself, surrounded by mountains, is a delight. There's also an adrenaline moment: crossing a large iron bridge with the vehicle, marking the beginning of a dirt road that disappears into the horizon. This dirt path becomes the protagonist, with curves that raise dust, making me feel as if I were in a Mad Max scene. But it’s impossible not to snap back to reality when the Potrerillos dam comes into view, its turquoise water reminding us that we are in a unique place.

Finally, we arrive at Chirivía. The first image we encounter is that of people enjoying a vermouth, some standing, others sitting, all surrounded by the majesty of the mountains. The atmosphere is filled with warmth and joy, as if everyone is exactly where they should be. César and Benjamín Montes de Oca, father and son, and the host chefs of the experience, greet us. From the very first moment, they walk around with a smile and a kind word for each guest, ensuring everyone feels at home.

It doesn’t take long before a vermouth is in my hand, followed by a parade of delicious tapas. At that moment, César positions himself in the center of the space and shares the story behind the name of the experience we’re living. To my surprise, the chirivía is an ancient type of carrot that was hung in front of donkeys to make them move forward, chasing something unattainable. For the Montes de Oca family, it symbolizes overcoming, learning, and the importance of enjoying the journey toward one’s goals.

What’s on the Chirivía Menu?

It consists of 10 courses, each carefully designed to pay tribute to seasonal products. The flavors and textures of each dish are a spectacle, and each course is paired with carefully selected wines, including their own label: a fresh, light rosé produced by Amuleto Wine Co.

The snacks, like Parmesan peas and scallops, alongside a sushi roll, are just a preview of what to expect from the main courses. My favorite was the rainbow trout, though the grand finale came with the last course: a dulce de leche pancake, the kind that makes you nod involuntarily.

There are no formalities here: during the snack courses, we approach the bar, where the chefs cook in front of us. Lining up becomes an opportunity to share a smile or a chat with fellow diners. Strangers become adventure companions, united by the excitement of experiencing something unique in a spectacular setting. The main courses also encourage sharing, as they are served in the center of the table and everyone grabs a bite with their fork.

The service is impeccable. The waiters are always attentive, suggesting wines, answering questions, and paying attention to every detail. One even warned me that the sriracha for the garlic shrimp was very spicy. Spoiler: it was. However, noticing my expression, which revealed my low tolerance for spice, one of the waitresses quickly offered me a white wine to balance the flavor.

Halfway through the experience, we take an unforgettable break. With a glass in hand, we head down to the shores of the Potrerillos dam. Some dare to dip their feet in the water, while others, like me, remain standing, taking in the breathtaking view that seems taken from an art painting. This also presents another opportunity to connect with people from different parts of the world, all amazed by this gastronomic oasis in the midst of the mountains.

Another detail that doesn’t go unnoticed is the music. Upon arrival, there's folk music, but it soon shifts: national rock, international tunes, and even cumbia during more relaxed moments. César, while preparing a tossed salad in front of us, dances as he seasons the ingredients. The music not only cheers up every moment but encourages singing, laughing, and connecting with others and the experience.
