The award-winning Chef Mary Dumont, formerly of Harvard Square’s legendary Harvest, runs Cultivar from its home in the Ames Hotel. Dumont’s menu focuses on sustainable, hyper-seasonal ingredients; the restaurant has its own hydroponic garden on-site. (Entrees feature sustainable seafood and dry-aged meats.) A mix of local office workers and hotel guests fill the stylish bar area to enjoy selections from the gin-focused, botanically-inspired cocktail program.
