Forn Baluard

With a custom wood-burning oven and a store built with a light-coloured wood, Baluard has carved a niche into Barcelona's bakery universe bit by bit and without making a big fuss. Their breads bring to mind a long-lost neighbourhood bakery and that trip through southern France. It's a place where the passion for baking has been inherited by four generations of bakers. One of our theories is that the name of the bakery, Baluard, is not just the name of the street it's on, but a metaphor for what this place is – a defender of the culture of flour, yeast, and time.
